The problem you'll have is that you'll have to "rip" each DVD and then reencode, or demux, the footage into something editable like an AVI file. Then, when you're done, you'll have to reencode the footage to MPEG2 - thus recompressing footage that is already compressed when it was shot. You'll take a quality hit.
You could, perhaps, move your dvd files over to your PC, and then use an authoring program to reauthor and link them all together, but again, you're looking at demuxing everything. It'll be quite the hassle.
Some software that could help is DVD Shrink, and NERO.
