does the canon sd1100 have a date and time stamp on it?

The date and time are stored in the EXIF data with every picture from just about every camera, so you can select the option from your printer when printing the pictures to print date and time stamp. If you want the date on the picture itself right when you take it, you MUST select the image size called date stamp, which produces an image at Fine resolution (1600 x 1200), and prints the date.

If you say you want the date and time stamp on and so take the picture with it--then you later change your mind, is there a way for it not to display with it or for you to take it off?

Once its printed on a photo you can't take it off. But since there is no way to permanently stamp the date on the original picture without using a third party program it shouldn't be an issue. Just save a duplicate if you do add the date to your photos.
