One way to combat this issue is to shoot on the available presets for whatever condition you're shooting in. Also, use a flash - even in daylight. It'll freeze the shot and make your subject "pop."
I'd also try resetting the camera and seeing if Kodak has a new firmware update for it. and in the end, you can always adjust things with a utility like Photoshop or Picasa (free from google).
