Great question.
In order to do this, you need to buy the iPod Camera Connector a little USB adapter that will allow you to directly connect your Digital Camera to your iPod.
Apple provides a list of compatible cameras here. Any of the cameras on that list will work.
Of the cameras on that list, I'd definitely suggest you get the Canon SD550 or Sony Cybershot T7
