There are two camera I will suggest that can take on the specific requirements you are looking for. One is the Canon S3 IS and the other is the Sony H5. Both of these cameras are super fast and have 7.2 MP sensors with 12x optical zoom. This is what you are looking for. These camera are kind a middle ground between point and shoot cameras and really serious pro SLRs. In a way I feel it is the best of both world, power and ease of use with high quality stills tacked on. Either one is a great buy.
I suggest checking out each cameras individual user reviews to find which one suites you best, but honestly you can't go wrong these are suburb machines.
